Three things I can think of that can cause that code

Bad T stats, bad ECT sensor & locked up fan clutch. Maybe bad head gasket if it's leaking combustion gases into the coolant and creating gas pockets but you'd have other issues to indicate that

I'd get an actual scanner on it that can read coolant temperature and see what it says vs going off the dash which is wighted and not terribly accurate

I have an Edge tuner it reads the code. It has come up twice. I cleared it the first time. It too about 2 weeks to return. After driving for about an hour it only gets to 150 degrees. So I'm thinking t-stats.

It’s a different type of p0128 code. This one is looking to see if temp can hold but instead it’s falling below a threshold.

Most likely t-stats. Put ac delcos in it. Mishimoto and motor rad plain suck ass
