I have 06 LBZ when I get on the throttle maybe about 3k and up on the tach I sometimes get a bit of gray/black smoke.

I noticed it more this weekend while towing. When it would downshift going uphill and hit 3k and up.

Normal driving doesn't smoke at all.

So is that normal behavior or a telltale sign something is on the outs?

Truck has 65k on it. I wouldn't think anything like an injector would need replaced yet (hopefully).

Little puffs of smoke or a light haze is not abnormal for an LBZ. Many times what you will see will be soot blowing out of the cat once it has been broken down small enough to pass through it. When you get on it, it will clear out the built up from the cat and piping.

X2 mine would put out a pretty good puff every now and again.
