Would it be easier to add a finger throttle like the rock crawler guys do?
The throttle is all electronic. With the ABS system, you would have to find a way to make the ABS pump apply and hold the brakes.

Depends on how you plumb it. Are you only trying to apply the front brakes, or all the brakes? Applying all the brakes should be easy enough, just plumb it in like the foot pedal, and the ABS should work like normal.
If you're only applying the front brakes, you'd have to plumb it in after the ABS, which might confuse the crap out of the ABS system.
It is also theoretically possible to tell the ABS system itself to apply specific brakes, but I'm not aware of anyone who has actually made a product to do that.
