The s475/stock setup will push your stock motor beyond its limits with more fuel. What HP are you looking for to add the 66?

Most guys I believe go with a s366/s480 setup. I haven't seen many at all or read up on s475 over s366 setups however I would say it should spool up a little quicker and if you ever want to go bigger it won't be a problem!

I was also thinking spool up might be a lil quicker. I know they use a 480 mostly but I have an s475 already so figured I'd put it to use in a twin set with a 66. Just wanna make sure the 75 wont be to small for the 366

I wanna say you should be perfectly fine but not 100% sure. Hopefully someone with a bit more knowledge will chime in!

Take a look at Fleece's "compact compounds" setup if you don't have any plumbing made yet... It's by far the smartest packaging arrangement yet (think stock 6.4 Ford), and I believe they run a cummins 90* discharge S366 over an S475 and the spool and torque development are amazingly linear.

Also you'd have to be sure the turbine sides match, and the S475 is doing more of the "work" if you calculate both as isentropic compressors... But she'll go just fine.
