A list to start with:
GT40:
-Journal Bearing (like your OEM)
-B/C of journal bearing it is said that it is easier to rebuild (by any reputable turbo shop)
-Oil Cooled only
-May spool a little slower than a ball beaing turbo

GT40R:
-Ball bearinged
-B/C of the ball bearing, it will most likely have to be sent in to Garrett to be rebuilt
-Liquid Cooled, just like your OEM
-Faster spool up
-May have a little louder whine than a journal bearing

Someone will correct me if I'm wrong on anything, and add on to the list I'm sure also!

will anyone of these turbo's fits those guide lines above?

If they are teching with a 2.55" plug you may be able to sneek the GT4088 with the 64 mm inducer. The GT4088R looks like it will fit nicely into the street legal class.
