After experimenting I'm pretty sure it's not the pump.

I can run it hard and get it to 217 quick and pushes coolant like crazy, then pull over and it comes right back down to 200 settling at 180.

Time to drop it off at Top Notch Garage!! Just gotta get back to Texas

Josh can he run with the coolant cap just cracked so it doesnt build presure?

Coolant cap should be able to get 1 at any parts store to see if its a quick fix.
