Can anyone help me determine how much 5th wheel trailer I can tow and what my max pin weight would be on a 2019 2500hd crew cab standard bed? Not sure if payload is my max pin weight cause the Chevy trailering guide is blank for 2500’s. Thank you!

According to the trailering guide max 5th wheel capacity is 13,500 lbs. With that, I think the 2,600 lb pin box weight is going to put you close on the rear axle. Pin box weight is estimated and can be higher or lower depending on how much you put in the trailer and where it's places. I think toy hauler weights are bases on max garage weight so king pin weight may be heavier if you do not max out the garage.
Here are my weights on my trailer (not a toy hauler):
Steer axle: 4,680 lbs
Total truck: 10,440 lbs
Drives: 5,740 lbs
Trailer axles: 7,880 lbs
Total: 18,300 lbs
Truck only:
Steer: 4,740 lbs
Total Truck: 8,320 lbs
Drives: 3,580 lbs
Max rear axle is 6,200 lbs. I am over truck gross of 10,000 lbs, but under axle.
