Have you checked for blockage pre air filter?
I’ve seen a lot of foliage inside those parts before
Restricted airflow would definitely cause the evaporator to freeze up

I have not, what is the best way to check? Is there a panel I can remove quickly to see?

It’s under the windshield trim
Its unlikely that it’s blocked but never know
Depending what pressures are you might have a blockage in the system causing the evaporator to be freezing over
I’m pretty confident like josh said that it’s freezing up
Airflow should always be flowing unless it’s frozen over
Best thing to do is next time it happens drop the fan and stick a bore scope in there
