I keep getting a P0128 engine coolant temp low code. Is this a stuck open thermostat or something along those lines? I used to get it seldom when I had the old motor and when it was very cold out. Now since the engine swap I have gotten it 3 times in 3 days with outside Temps about 65. It doesn't seem to take long to warm up.

Yep change thermostats.. What usually happens is the rubber deteriorates and coolant flows on by.

Basically like a half stuck open stat

That's crazy they looked fine when I swapped the engine. Lol. So what's everyone going with? Stock or high temp? I rarely tow but when I do its a 8k lbs 5th wheel and I live in Georgia. About 95 to 105 with 80%+ humidity in the summer and winter down to 10 and 15 degrees.

Just put oe back in it..

Unless you do a lot of hard core towing. Then the mishimoto low temp are good
