Was trying a new tune today. :D

Don't worry, no animals were harmed during this test. The ribs were already dead.

A little tough but still delicious. ;)

Still learning how to properly cook but it's becoming a second hobby of mine. Much cheaper than my first I must say.:spit:

Smoker looks awesome! I brought home a 560 gallon tank home saturday. Plan to mount it on a 5x8 trailer with a firebox and wood rack.

I do my ribs dry, brown sugar, black pepper, garlic powder, and various other seasonings. Rub them the night before, and let them sit out of the fridge about an hour before I put them on. I smoke mine 7-8 hours, if you let them come too room temp before throwing them on and cook them slower they are more tender. Once you get it down try a whole turkey, I had alot of fun learning and I had some pretty bad results some times.

its important to trim that thin white layer of cartlidge off the back side of the ribs before you cook them, it makes a lot of difference how tender vs tough they turn out

Silver skin - yes I pulled it off.

Main problem I had is my smoker has very little control when the wind is blowing. It got too hot.
