So it doesn't really get cold enough in Texas to warrant worrying about a grille blanket. However, the past few weeks of driving in Texas have been pretty cold. For some of my driving my LLY won't heat up all the way to just below 210. When that t-stat does finally open, it cools it back down. I'm worried about this hurting my mileage, but would a grille blanket block too much? Options?

Disable the low temp stat. Replace it with a solid blank or a disabled stat. You won't have the cooling capacity for towing or plowing, but it should keep you at 200, instead of 175.

A grill cover can help also, but be careful to let some through the center.

Anything above 180F is ok IMO. I rarely get above 175F between Dec and Mar with no issues. The biggest thing in the winter that kills mileage is excessive idle time.

Give it 2 weeks and you will likely be looking for the A/C again anyhow!! :D
