Get your grill going about medium. 350 deg if you have a thermo.

Take a whole chicken that hasn't been abused. Remove the gizzards, rinse with cold water, then pat dry.

Cut a lemon in 1/2, and rub the whole body down with the lemon, squeezing now and then to get the lemon juice flowing.

Sprinkle carcass with coarse salt and black pepper (Montreal Steak Seasoning from Costco works well). Also sprinkle inside.

Drink half a beer out of a can. Squeeze some of the lemon in the top. Cram it up the bird's ass.

Grill about 1.5 hours or until a meat thermo in the breast reads 180 deg. Beer in can is HOT, remove it carefully and serve.

you actually put the can in the bird?:confused:

so the beer evaporates into the chicken then you pull the can? it doesn't leave a funny cannish taste?

The beer can steams the inside of the bird and helps transfer heat to cook the inside. By standing it up, it helps the bird baste itself, you don't need to baste.

I'll be honest, I don't cook anything that isn't simple. I don't like 20 ingredients or 20 minute prep time. Screw marinading overnight.

Beer Can Chicken is easy, quick (prep), and tastes most excellent.

You might notice the hickory chips smoking off to the side. It will make the skin taste better (a little), but really has no effect on the meat.

Take some hickory or apple wood chips and soak them for 15 min in beer while you're getting the other stuff ready. Put them on a side burner away from the chicken, and turn it up to high. When the chips starts to smoke, turn them down.

And I also just bought that Montreal Seasoning Pat mentioned and used it for the first time this paast weekend on some pork chops. They were yummy but I think that seasoning is mostly just course salt and pepper??? Not much else to it that I could tell.

Yup, MSS is mostly just a time saver. Has both the salt and pepper in the right ratio and the right size grains in a handy shaker. Has some other seasonings including paprika, cumin, and garlic in small amounts, IIRC.

I use it on everything but ice cream where I need salt and pepper.

i personally hate chicken and turkey and such because it is just too dry no matter who makes it.

But beer butt chicken is one ill have to try next weekend when the gf is home

I like deep frying my birds.But will try the beer can and some bacon like Dale said.
