What is the tallest size tire I can put on my stock Sierra 3500 Dually wheels?

I'm running 285/70/17 on my stock wheels. I do have a spacer as well. I think width is going to be your limiting factor.

Well you can get bogger tires like 54" tall on a 17 rim

They are not stock rims but have the same offset and width as stock
