thanksYes, the Mahle Wave Stopper is arguably the best MLS gasket we have available for these trucks. Make sure you take the heads to the machine shop and have them decked for flatness and have all the seats/guides checked as well as checked for cracks and valve recession after decking.
Plan is too install street rods. They should be good for 1000hp. I'm going too pull out engine for this.IMO at 600 WHP you are pushing it with stock LB7 rods, even with a turbo and SAC45s. It can be done, and has been done, but your tuning needs to be spot on to keep it alive long term. I run the Victor Reinz / Mahle wave stoppers in my LB7 at 660+ WHP, never had an issue. Definitely the gasket to use on a LB7.

How much hp on stock cp3? ~575-600 if it's healthy, some make a touch more
How much on on sportsmann cp3? ~650-675 it seems (my experience, some may have gone further)
What is the best cp3 choice? IMO for your goals I would go with a 10mm CP3 from Exergy/Fleece/S&S/Industrial.
