Alright let's pretend im for some reason having a hard time taking my old edge out... Followed the wires from the edge box to the two plug-ins and unhooked them. There is a green wire that runs into the back of a harness... I was hoping this was just a plug and play... Just wanna get this outta here. Thanks guys!

Followed the two black connections to the plug-ins and unclipped them. Still have wires holding everything in. Just confused what to unhook and what needs to stay connected. Do I pull wires out that are holding plugs in? Just electronically retarded.

Yes unhook the connectors that run to the juice box. Just flip the tab up and pull the connectors apart. Dnt pull wires out of the connectors. Then you are goin to have to hook the connectors back up the way they came factory(only one way they can go) then your good to go. Take the wire from the screen out, take egt probe wires out and then the power wire goin to the fuse box. Real easy

The steps above are correct. I believe the only thing that I had to actually unscrew was the temp prob in the exhaust manifold. Everything else just unpluged from the stock harness under the hood.

Can I keep the egt cable plugged in or if not, how do I get it out and keep it from having an exhaust leak?

You can keep it in and just not have it hooked up I guess. I ended up putting in a gauge pod when I took my edge off so I just took the edge EGT probe out and put my new EGT gauge probe in the same spot. If you don't plan on running a EGT gauge (which you prob should), you could always just go down to the hardware store and get a plug to thread in place of the edge egt probe.
