Every couple days my low coolant light comes on and I add about a half gallon each time and I don't have any leaks that I can see. Where could it be going? Could it be my water pump?

You would see it leaking if it were your water pump. Could be a number of things, bad coolant cap, egr cooler, head gaskets, etc.
I don't have an egr anymore. And what would some signs be if it was my head gaskets? I really don't want to replace them.
Drive your truck and get it up to operating temp. The next morning it the top radiator hose is firm you may have a blown gasket.
