I use moly assy lube (Stalube?).

The reason to use assy lube is that it's more persistant, so that if you have problems getting oil pressure, less wear will occur. It washes off shortly after you get oil pressure.

when installing main and head studs how critical is it to use the ARP goop? Can you substitue regular moly assy lube?

Pat polished the threads first then used the assy lube. There is a pic here somewhere I will see if I can find it.

X2 if you have something that is a moly lube, you should be good to go. I think the stuff we used was from crane cams.
