Is it possible to take an OEM touchscreen Nav /DVD player from an 07.5 and newer and install it in my LLY? If so, any special fabbing need to be done for fitment?

ANYthing is possible. What you are considering is practically impossible,

Here's why: The entire electrical system is different on the 03-06 and 07.5+...

It's not worth even considering in view of all the aftermarket options available.

An oem GM nav unit isn't even the best option (though I'm sure some people prefer the factory integration aspect).
You can do a lot better with a Nexus 7 or iPad mini running nav software from TomTom or Garmin,
and then you'd be able to take it out of the vehicle, and use it for a lot of other things too.

Personally, I'd go with the 4GLTE Nexus 7 FHD (2013 version). But you have a lot of other options,
and any of them provide a larger screen and more functionality & flexibility than an oem GM Nav unit,
and you won't have to re-invent the wheel to mount/install/use them either.

A nav unit with out-of-date maps is OK for highway travel, but will be a big disappointment when you search for POIs.
If somebody plans a trip on their laptop/desktop PC, I doubt that one of those older oem nav units would be able to access that trip online (or even from a flash drive/card for that matter).
That's for starters, and the nav functionality/user experience doesn't get any better after that point either...
so if somebody wants nav tech that's four years old (much less eight), they'd probably be better off buying a used standalone PND for $20 or $30 ;)

Or if they wanted something newer, but less costly than a tablet/nav app, there's always something like a NEW Garmin 2555LMT for around $100 including lifetime maps & traffic.
But considering that 5" PNDs like the 2555 are very low res by today's standards (only 480 x 272 pixels), I'd still take a look at one a previous generation tablet, maybe an Asus Memopad of first generation Nexus 7.
